Description

Seed of the aquatic plant (zizania palustris) called “water oats” or “Indian rice”, which grows wild on the swamp soils of North America. Traditionally harvested in a canoe, the American Indians considered it a sacred fruit.
Very rich in fibre, protein and lysine (a beneficial amino acid). It supports freezing and pasteurisation while maintaining an optimal state. When frying it in very hot oil, you get some “pocoons” with a very unique texture.

TIPS FOR USE:
Recommended as an accompaniment or in salad. Boil with excess water. Once cooked, it should be “al dente”. Cooking time approx. 20 min.
Use very hot oil in case of frying. Remove from the heat as soon as the grain is opened.
